I'm a 70 yo Texan and I know hot sauce (salsa as y'all call it). Believe me, I know hot sauce. Yours is in the top 3 off all that I have had my entire adult life. Congrats. I took 2 jars home from the restaurant and ordered 6 more to be shipped back to Texas. Packing was excellent as well. Y'all are doing a great job. Keep it up!
